Almost-Homemade Cake

While I do have recipes for from-scratch cake – and I’ve even made them – a boxed cake is somehow so much easier. But is it delicious? Not particularly.

I found a series of online recipes that claimed you could “doctor” box cake mix to make it taste super-yum. But really, if you’re adding this much crap to a box of cake mix, why don’t you just do the whole thing from scratch, ya know? But anyway here’s the proportions.

By the way, this is for HALF of a box cake mix. What can I say? I live alone; I only ever make half a package of anything.

Oh and also – I mix it right in a 2-cup Tupperware container. It fits perfectly, and then the batter goes right in the refrigerator. Oh you thought we were baking this? LOLOLOL – we eat it with a spoon!

2 eggs
1/4c sour cream
1/4c melted butter
1t vanilla
1/2c water + 1/2 of 1/3 c of powdered milk (half of a third of a cup – a sixth of a cup??)
a splash of cream
1/4c flour
1/4c sugar
1/4t salt
HALF of a box of cake yellow cake mix

Mix all the liquid together; add the flour, sugar and salt; then add the cake mix. Stir increasingly quickly to get all the lumps out. Refrigerate and enjoy!
