Alton Brown’s Buttermilk Pancakes

Makes 12 pancakes.

2 eggs, separated
2 c buttermilk
4 T melted butter
2 c. flour
1/2 t baking soda
1 t baking powder
1 t salt
1 scant T sugar

Whisk together egg whites and buttermilk in a small bowl. In a separate bowl, whisk the egg yolks and melted butter. Combine both mixtures and whisk together thoroughly.

Combine all dry ingredients in a large bowl. Pour wet ingredients on top. Mix just until combined. Don’t try to get all the lumps out.
