This dish is so versatile. It can be a side dish alongside a roast or chicken cutlets, and it’s equally at home on the breakfast table, next to eggs, pancakes or even a quiche. If you’re doing the Reboot Your Life fruit-and-veggie fast, this is one of their recommended breakfasts. You could even serve it for dessert! (like over vanilla ice cream?) There’s no added sugar, so the sweetness comes just from fruity goodness. The coconut oil helps to offset the glycemic hit you would otherwise get by eating so much fruit all at once. Makes approx 3 cups
2 apples (I used honeycrisp)
1 cup cherries, pitted
3 T raisins
1 T cinnamon
1/4 t nutmeg
1 T coconut oil
Chop the apples and cherries into bite-size pieces. Combine with everything except the coconut oil and pour into a baking dish. Cover with foil and bake for 35 minutes at 400 degrees. When it’s hot from the oven, stir in the coconut oil.
