Apple Oat Crisp

I served this dessert as the finish to a dinner of braised lamb and lentil-stuffed peppers, and everybody said it was the perfect combination of sweet and tart. The secret is to use granny smith apples. 😉

Topping:
1/2 c rolled oats
1/2 c rolled oats, coarsely ground in a blender or Cuisinart
1/4 c brown sugar
1/4 c butter (half a stick)
1/8 t salt

Filling:
2 lb Granny Smith apples (about 5) – peeled, cored and sliced
1/4 c brown sugar
1/4 dried cherries or raisins
1/4 t cinnamon

Combine filling ingredients in a plastic bag to coat apples with sugar. Put in a buttered baking dish. Remember that it should be piled high in the pan.

Combine the topping ingredients into a crumble and sprinkle over the top of the apples. Bake for 30 minutes covered in a 375 degree oven. Uncover and bake for another 30 minutes until top is browned.
