Thai-Style Kohlrabi Salad

Kohlrabi is one of the healthiest vegetables around, but it can be hard to come up with unique ways to prepare it. This salad fits the bill!

It’s delicious and filling as a one-dish meal, or as a side dish along with grilled chicken or some other meat dish. Serves 1-2 as a main dish, or 4-5 as a side dish.

2-3 kohlrabi heads
1 large carrot
2-4 T Thai-style peanut sauce
1/2 c raw peanuts, chopped
1/4 c cilantro, chopped

Grate the kohlrabi and the carrot using the large holes of a cheese grater. If the veggies are particularly wet, drain them a bit, or even wrap them in paper towels to squeeze out the excess moisture.

Stir in the peanut sauce, chopped peanuts and cilantro. Adjust all ingredients to your own personal taste.
