Best Hummus Ever

This is one of the recipes that my friends look forward to eating when they come to a party at my house. It’s soooooo much tastier than store-bought hummus – plus it’s less expensive! And considering how super-easy it is to whip together, there’s really no excuse for store-bought hummus ever again! The only “special” kitchen equipment you need is a Cuisinart.

1 can chickpeas (or 2 c cooked fresh)
2 T tahini (sesame butter – look for it in the kosher section of the grocery store)
1-1/2 T fresh lemon juice
1/2 t. garlic powder
3/4 t. salt
2 T olive oil (good-quality olive oil is called for here!)
1-2 T water (you’ll use less if you didn’t thoroughly drain the chick peas)

Put the chickpeas in the Cuisinart with the Tahini and blend. Add the lemon, garlic, salt and olive oil. With the machine running, drizzle in water until the hummus becomes soft and almost pillowy. 😉

In the serving dish, use a spoon to make a swirl through the center, then drizzle olive oil over the top. Add a sprig of parsley or cilantro, or a dash of paprika, to give it a little color. Serve with pita chips, fresh veggies, even as a salad dressing!
