This is a super simple preparation for rice that adds a ton of flavor.
Saute a smallish onion (don’t overdo it) + a few cloves of garlic in oil. When they start to soften, add 1c of rice and 1/2t cumin (don’t underdo it!). Add 2c of chicken broth and a can of black beans. The beans are more of a garnish in the rice, especially if you’re serving it with a meat dish. So even if you increase the rice, keep the beans at just 1 can.
Cook for 15 minutes like normal.
