Thai-Style Kohlrabi Salad

Kohlrabi is one of the healthiest vegetables around, but it can be hard to come up with unique ways to prepare it. This salad fits the bill!

It’s delicious and filling as a one-dish meal, or as a side dish along with grilled chicken or some other meat dish. Serves 1-2 as a main dish, or 4-5 as a side dish.

2-3 kohlrabi heads
1 large carrot
2-4 T Thai-style peanut sauce
1/2 c raw peanuts, chopped
1/4 c cilantro, chopped

Grate the kohlrabi and the carrot using the large holes of a cheese grater. If the veggies are particularly wet, drain them a bit, or even wrap them in paper towels to squeeze out the excess moisture.

Stir in the peanut sauce, chopped peanuts and cilantro. Adjust all ingredients to your own personal taste.

Alkalizing Raisin Zucchini Muffins

These delicious muffins are a filling and healthy way to start your morning – way better than a donut or bowl of sugary cereal (thanks to the flax seed!). Of course it will still be tasty with genetically modified corn, it just won’t be very good for you anymore! The cream is optional, and with or without it, the rich corn flavor makes this soup fabulous. The … Read more

Cauliflower Soup

This delicious, light and fresh-tasting soup gets its unique flavor from the mint. And unlike most recipes for cauliflower soup, this is not a cream-style soup. Instead, it’s a light and flavorful broth. So it’s extremely low-fat and low-calorie, plus it’s packed with healthy vegetables. It freezes remarkably well, so I always like to make … Read more

Lentil-Stuffed Peppers

These hearty peppers were a huge hit at a recent dinner party I hosted, where several of my guests were decidedly apprehensive that I was serving a vegetarian meal. Don’t let the Indian seasoning profile scare you either – the spices just give them a nice robust flavor, nothing that will taste “weird” or “foreign” … Read more
