Delicious Steamed Mixed Vegetables

I don’t know about you, but my mother’s idea of a “vegetable” growing up was either beans, peas or corn – usually from the freezer. It wasn’t until I was in my mid 30’s that a wholistic health care practitioner introduce me to the idea of mixing vegetables. And at first I was dubious – … Read more

Mediterranean Vegetables with Quinoa

What makes this dish special is the hint of lime – delicious! And like so many vegetarian dishes, the secret is to start with the highest quality vegetables. If you don’t have quinoa on hand, it also works well with cous cous. (but that wouldn’t be gluten-free) The particular combination of vegetables I’ve listed gives … Read more

Thai-Style Kohlrabi Salad

Kohlrabi is one of the healthiest vegetables around, but it can be hard to come up with unique ways to prepare it. This salad fits the bill!

It’s delicious and filling as a one-dish meal, or as a side dish along with grilled chicken or some other meat dish. Serves 1-2 as a main dish, or 4-5 as a side dish.

2-3 kohlrabi heads
1 large carrot
2-4 T Thai-style peanut sauce
1/2 c raw peanuts, chopped
1/4 c cilantro, chopped

Grate the kohlrabi and the carrot using the large holes of a cheese grater. If the veggies are particularly wet, drain them a bit, or even wrap them in paper towels to squeeze out the excess moisture.

Stir in the peanut sauce, chopped peanuts and cilantro. Adjust all ingredients to your own personal taste.

Cauliflower Soup

This delicious, light and fresh-tasting soup gets its unique flavor from the mint. And unlike most recipes for cauliflower soup, this is not a cream-style soup. Instead, it’s a light and flavorful broth. So it’s extremely low-fat and low-calorie, plus it’s packed with healthy vegetables. It freezes remarkably well, so I always like to make … Read more

Lentil-Stuffed Peppers

These hearty peppers were a huge hit at a recent dinner party I hosted, where several of my guests were decidedly apprehensive that I was serving a vegetarian meal. Don’t let the Indian seasoning profile scare you either – the spices just give them a nice robust flavor, nothing that will taste “weird” or “foreign” … Read more
