These tasty morsels are easy to throw together, and make for good snacks later. You can also freeze them raw.
1 T olive oil
1 T minced garlic
2 t chopped fresh thyme
salt & pepper
4 6-oz bone-in chicken thighs
1 lemon, cut into slices
Combine olive oil and spices, stuff under skin of the chicken thighs. Saute thighs skin-side down in an oven-proof skillet about 4 minutes. Turn over, top with lemon slices. Bake at 425 degrees for 18 minutes.
If you’re feeling fancy, deglaze the pan with some white wine, after pouring out the extra fat.
