Chili with Beans and Vegetables

I have another recipe on this website for super-easy chili; but the reason it’s easy is because all the flavor comes from the canned tomatoes. If you don’t have those on hand – or you want to do something a little more homemade – I offer you this recipe, that I got from SpendWithPennies.com. It’s still pretty dang easy. 😉

1lb ground beef, well seasoned with salt and pepper
1lb ground chicken or turkey, well seasoned with salt and pepper
1 onion, diced
1 jalapeño, diced (the more little brown lines your jalapeño has, the spicier it will be!)
4 cloves garlic, minced
2T chili powder (1t cumin, 1t oregano, 1/2t cayenne, 1/2t chipotle chili powder, 1-1/2t garlic powder)
1t cumin
1t ancho chili powder (this is mild, but extremely flavorful)
1 green bell pepper, diced
28oz canned tomatoes
19 oz kidney beans, rinsed
2c beef broth (or replace one can with beer)
1T tomato paste

Saute the ground meat, onions and garlic for a few minutes. Drain if there’s much fat.

Add everything else and simmer for an hour.
