Coconut Macaroons

Holy moley, are these good!!! And sooooooo superior to anything you can buy at the store. Crispy on the outside, chewy on the inside, and a filling dose of healthy coconut besides. Plus they’re so easy!

If you want them a little chocolatey, stir a few chocolate chips into the batter before baking. Way easier than fussing with melted chocolate frosting afterwards.

The entire recipe is about 1700 calories, without chocolate

1/2 c sweetened condensed milk, less 1T (a scant half-cup)
6-7 oz of shredded dried coconut
1t vanilla
1 egg white

Blend the milk and vanilla, then stir in the coconut. The mixture will be pretty dry. Whip the egg white (I just put it into a shaker cup with one of those wire balls in it and shook vigorously until the egg whites were fluffy). Blend into the coconut mixture. Add chocolate chips if you want.

Drop into little mounds on a cookie sheet covered in parchment. Bake at 325° for about 18-20 minutes.
