Staying at my cousin Bruce’s house, I got a request from the boys for chili. Looking online for a recipe, I came across this one. It called for flavored canned tomatoes – something I’d never cooked with before, so I was dubious. But I’ll confess it turned out really well, and it sure was easier than cooking and sauteeing a bunch of vegetables!
And since chili cries out for corn bread, I whipped up a batch using this recipe.
1 lb. ground beef
1 small can diced tomatoes with green peppers and onions
1 small can diced tomatoes with green chiles
1 can beef broth
2 garlic cloves, pressed
3 T tomato paste
1 T chili powder
1 t cumin
1/2 t black pepper
2 cans kidney beans
Saute the ground beef. Add everything but the kidney beans and cook for an hour. Add the kidney beans and warm.
Serve with the usual fixings: grated cheddar cheese, cilantro, chopped green onions, avocado, sour cream …
