This is a recipe I got from my cousin Donna’s hairdresser, Toni MC. It sounded pretty tasty so I decided to try it out! For side dishes, I recommend whipping together: black beans, rice and guacamole.

1 lb tilapia filets
1 egg, beaten with a fork
flour, seasoned with salt & pepper (I used gluten-free all-purpose flour and it worked great!)
1 small chunk of red or green cabbage, shredded
1 ripe tasty tomato, cubed and seeded
lime wedges (optional)
cucumber slices (optional)
cilantro (optional)
corn tortillas
sauce (recipe below)

Dip tilapia filets in egg, then gluten-free flour seasoned with salt and pepper. Pan fry in butter or olive oil. Drizzle with plenty of the yummy sauce (below). Prepare the vegetables to serve on the side.

Sauce: 1 c. mayo, lime juice from 1 lime, 1/4 onion, grated, a little garlic, 1/2 t cayenne (takes the mayo taste off the mayo), salt & pepper.
