This yummy creamy dressing isn’t low-calorie, but it’s chock-full of healthy alkalizing ingredients like avocado, parsley and greens powder. Plus it’s so easy to make! If you don’t happen to have veganaise on your shelf, feel free to substitute regular mayonnaise – but then it won’t be as healthy.
It keeps in the refrigerator for a week or longer, so I like to make a double batch. Makes 1 cup.
1/2 avocado, peeled and pitted
1/4 c veganaise
1/4 c chopped scallions (2-3 stalks)
1/4 c chopped fresh parsley
1 T unflavored greens powder
1 T fresh lemon juice
1 large clove garlic, pressed – or 1/2 t garlic powder
salt & pepper to taste
Combine all ingredients in a food processor and process til smooth.
