Oh. Em. GEE. These have got to be the most delicious thing I’ve ever eaten. Even if they were high-calorie and unhealthy, I’d have to snack on them. But they’re neither of those two things!!! A whole jicama fruit (root? bulb??) has only 250 calories, THIRTY-TWO grams of fiber and more than 200% of the USDA of Vitamin C.
(Mind you, that’s A LOT of jicama – 650g or about 5 cups of the stuff)
And while this particular jicama I got from Hyde Park Produce today was delightfully sweet and crisp and juicy all on its own, when I added some seasonings to it …. {drool} {drool} {drool}. It’s equally awesome raw as well as cooked.
a whole bunch of jicama (I dunno how to tell you to measure this), cut into fat matchsticks
1 part garlic powder
1 part onion powder
1 part smoked paprika
1 part salt
3 parts olive oil
In the batch I just made I used 1t of each of the seasonings + 1T of olive oil. I drizzled it in two batches on a bunch of jicama that completely filled one of my black take-out containers.
To cook, put it in a single layer on a cookie sheet in a 425° onion for about 20 minutes. I’m telling you, I inhaled it so fast!!!
