Kale Date Plum Salad

I can never get enough salads in the summer and I’m always looking for new combos. This was a good one!

Several handfuls of kale, sliced into ribbons
1 peach, nectarine or plum – cut into small chunks (in the photo they’re wedges; but that’s harder to eat)
4 dates, chopped into large pieces
1T sunflower seeds
1t lemon juice (careful not to use too much!)
1t olive oil

You can prep a little bit ahead of time by chopping your plum and your dates, then putting them into a storage container with the sunflower seeds.

When it’s time to eat, massage your kale with a pinch of salt to soften it. Toss with the olive oil and lemon juice to coat. Put a wee bit of the oil on the dates if you want, to stop them from sticking to each other.

Dump everything onto your kale and enjoy!
