I saw this recipe on one of those TikTok-ish videos and it didn’t give amounts. But I did my best to guess and it turned out pretty well! Although I used a whole package of pasta and it was both too much pasta relative to the meat, and also the pasta wasn’t cheesy enough. So I’ve changed the recipe below to call for just half a package of pasta.
1 lb ground beef
1c chopped onion
2 eggs
1c cottage cheese
2c shredded mozzarella cheese, separated
1/2 c parmesan cheese (green can stuff)
1/4 c chopped parsley
6 oz gluten-free Pasta shells, boiled (half a bag)
1 jar pasta sauce (I used Classico roasted garlic)
Saute ground beef & add onions. Saute them too. Drain. Season.
Beat the eggs. Stir in the cheeses (reserve 1/2c of the mozzarella for sprinkling on top) and parsley. Combine with cooked pasta.
Butter your casserole dish (don’t skip this step!) and fill it with the pasta mixture. Then cover it with the ground beef mixture and top with the pasta sauce, spreading it out all over. I actually used 2 8×8″ pans – both so I could cook them in the toaster oven, and also so I could cook one and freeze one.
Cover and bake at 350° for 45 minutes. Top with a bit more mozzarella cheese and bake another 15 minutes until brown and bubbly.
