This is a recipe I got years ago from a Martha Stewart Living magazine. They aren’t terribly sweet and they are bursting with a lively citrus kick. The basic cookies are really super easy to make. The frosting can be as fussy or not as you want.
Preheat oven to 350°.
1c butter
1/2 c sugar
2t finely shredded lime peel
1/4c fresh lime juice (2 large limes)
1t vanilla
2-1/4 c flour
3/4 finely chopped hazelnuts
4 oz cream cheese
1c sifted powdered sugar
1T lemon or lime juice
1t vanilla
cream the butter and sugar. Add the lime peel, 1/4 lime juice and one teaspoon vanilla. Gradually stir in the flour and the nuts.
Divide the dough into and roll out each half to 1/4″ thickness on a lightly floured surface. Cut out with small cookie cutters and place on an ungreased cookie sheet. Bake for 8 to 10 minutes. Transfer to wire racks to cool.
beat together the remaining ingredients to make the frosting. Tint with a small amount of green food coloring. Pipe the frosting onto cookies.
Makes 72 cookies.
