Flank steak is a tough piece of meat – but with this wonderful marinade it becomes tender and succulent. I’ve served this at many dinner parties over the years (and my mother before me served it at many more!) It’s a consistent crowd pleaser.
1 1/2 lb. flank steak
1/2 c soy sauce
1 clove minced garlic
1 t ground ginger
2 T brown sugar
2 T lemon juice
2 T olive oil
1/4 c. minced onion
1/4 t pepper
Dissolve the sugar in the soy sauce, then combine the other ingredients. Marinate steak for at least 6 hours, preferably overnight. Make sure to turn a few times while marinating.
This steak is best if it’s grilled over a flame – but broiling it or even pan frying it work out just fine.
Slice it as thinly as possible, across the grain. This enhances the tenderness.
