I had a bunch of packages of assorted ground meats in the freezer so I decided to whip together this meatloaf. It doesn’t have any milk, and only one egg, so the texture is more like ground beef than some meatloafs. The flavor is excellent!
1/2 an onion, chopped
1/2 c shredded carrots, chopped
2 t olive oil
1 egg
2 slices Ezekiel bread (I used sesame)
1 t fresh thyme, minced
1/4 c chopped parsley
2 cloves minced garlic
1/2 lb ground turkey
1/2 lb ground beef
1/2 lb James Dean pork sausage
Saute the onion and carrots in the olive oil and allow to cool. Beat the egg with a fork in a bowl, and soak the two slices of bread in it. When they’re smushy, break them up with a fork. Add the thyme, garlic, parsley, meats and cooled cooked veggies to the bowl and combine.
I shaped it into 3 mini loaves, so they’d be better as single servings to keep in the freezer.
When I baked it at 400 for 30 minutes, it was a tiny bit overcooked, so I’m thinking maybe lowering the heat would be better.
