No-Olive Almond-Herb Tapinade

I came across this recipe as a suggested topping for roast radishes and it’s super yummy! It also comes together pretty easily in the cuisinart.

Makes 1/2 cup, 75 calories per tablespoon.

1/2c fresh parsley leaves
1/4c fresh mint leaves
2T fresh oregano leaves
1T capers
1 small garlic clove (slice it before you pop it in the cuisinart)
1/4c olive oil
fresh lemon juice to taste (I used 1-2 teaspoons)
1/4c almonds

Chop your greens first in the Cuisinart. Next add the capers and garlic, then put on the lid. With the machine running, drizzle the olive oil in through the top. After that’s come together, add a bit of lemon juice and whir a couple seconds to combine.

Your last step is to throw in the almonds and whir just a couple seconds; because you want the almonds to remain kinda chunky in your tapenade.
