[Video] Oatmeal Protein Pancakes

These pancakes are a great way to start a healthy day. They’re high in protein, plus the oatmeal gives a shot of healthy fiber. And they taste great! I’ve served them to fitness fanatics, kids and even couch potatoes – everybody loves them.

This recipe makes 1 serving.

4 egg whites
1/2 c whole rolled oats
1/4 c cottage cheese
1/2 t baking powder
1/2 t vanilla
1/2 t cinnamon
butter, for grilling
syrup (optional)

Optional additions:
1/2 banana
1 T brown sugar
1/4 t cloves

Combine all the ingredients in a blender and mix. Don’t run too long – you want the oats to be as whole as possible.

Heat a griddle over medium heat and melt some butter on it. Pour out four pancakes. When they start to turn dry on the edges and bubbles come up in the middle, they’re ready to flip. About 2 – 3 minutes on each side is all it takes.

Note: without any added sugar or banana, these pancakes simply won’t burn. If you cook them too long, they’ll just get sort of flat and hard. However, with sugar added you need to watch them carefully, and make sure the griddle isn’t too hot, otherwise you’ll have burned pancakes!
