Raisin Sauce for Ham

I always love fruit with meat – chicken salad with grapes, roast pork with applesauce, ham with raisin sauce.

1/2 c brown sugar
2 T cornstarch
1t dry ground mustard seeds
1c water
1T apple cider vinegar
1T fresh lemon juice (1/2 a lemon)
1/4t lemon zest
1/2c raisins

Combine the dry ingredients in a small saucepan and whisk together. Combine all the wet ingredients together in a glass measuring cup. Turn on high heat under the saucepan and slowly add the wet ingredients + raisins, whisking constantly. Once it boils, reduce the heat to low and cook for at least another 10 minutes, whisking frequently.

At first it will be light in color and taste mostly of lemon. The longer it cooks, the darker and more raisin-y it will get.
