Ramadan Salmon & Rice

One night I was surfing TikTok and found this super yummy recipe.

1 whole red onion, chopped
1T chopped garlic (3 cloves)
a swirl of olive oil
1T honey
1t paprika
1t ancho chili powder (mild but flavorful)
1t cumin
1/2t salt
a few grinds of pepper
4 narrow salmon filets (1 pound)
2c cooked rice
1 lime – half of it sliced into half-moons for garnish, the other half juiced
cilantro & mint

Stir the aromatics, honey and oil together in a baking dish. Combine the spices into a little dish and put about 2/3 of the mixture in with the aromatics. Lay the salmon filets on top of the aromatics, sprinkle with the remaining seasoning.

Bake at 400° for about 10 minutes; remove the salmon. Stir the cooked rice into the onion-y goodness and put back in the oven for another 5-8 minutes. Add the salmon if it isn’t quite cooked yet.

Squeeze half a lime into the rice and over the fish; stir most of the cilantro and mint into the rice.

Garnish the fish with the half-moons of lime and the rest of the cilantro and mint.
