This was a great recipe I got off TikTok. He didn’t give any amounts but I like what I came up with:
2T olive oil
juice of 2 limes
a bunch of cilantro
2 -4 jalapeños, depending on spice desired
taco seasoning
• 2T cumin
• 1-1/2T chili powder
• 1-1/2T garlic powder
• 1/2T paprika
• 1/2T oregano
• 1/2T salt
4 cloves garlic, minced
Combine the marinade and coat chicken pieces, then refrigerate for a few hours or overnight.
I fried them in a skillet, and the marinade burned. It was still tasty though! Baking worked; but I don’t remember the directions. In my new Cuisinart combo convection/toaster oven, I did bone-in thighs on the convection/bake setting (is roast different??) at 325° for 25 minutes and they were perfect.
