Sweet & Tangy Cabbage-Orange Salad

This is such a yummy twist on coleslaw, without all that goopy mayonnaise. The pine nuts give it a terrific little something. But if you don’t have any on hand, walnuts would make an acceptable sub. I got it from The Spruce Eats and modified it.

Makes 9, 1/2-cup servings; 123 calories per serving

1/3c scallions, greens & whites (about 4 whole stalks)
8c cabbage mix – purple is prettier but white is yummy too
1/3c pine nuts
1 10-oz can mandarin oranges, with 1T juice reserved (not syrup!!)

For the dressing:
4T brown sugar
4T red wine vinegar
1T reserved mandarin juice
1/3c vegetable oil
1/2t garlic powder
1/2t salt

Chop the scallions and combine them in a big bowl with the cabbage mix and pine nuts.

Combine all your dressing ingredients in a cruet.

Pour your dressing over the veggies and add in the oranges at least an hour before serving.
